I love cupcakes. Lately I have gotten hooked on watching Cupcake Wars with Imogen, and it has inspired me to start baking. I am going to post the recipes to taste tested cupcakes that maybe you would enjoy too. I have a few pictures, and I will add more as I go. Hope you find something to fit your taste buds.
Strawberry Short Cake
Cake:
Ingredients
Cake Batter:
1 1/2 cups all-purpose flour
1 1/2 cups cake flour (not self rising), sifted
1 tablespoon baking powder
1/2 teaspoon kosher salt
1 cup unsalted butter, room temperature
1 3/4 cups sugar
4 large eggs, room temperature
2 teaspoons pure vanilla extract
1 1/4 cups whole milk
For the cupcakes: Preheat the oven to 350
degrees F. Line two 12-cup muffin pans with cupcake liners.
In a medium bowl, sift together the flours,
baking powder and salt, and set aside. In a mixing bowl, cream the butter and
sugar on medium-high speed until light and fluffy using an electric hand mixer.
Add the eggs, one at a time, beating until just incorporated. Beat in the
vanilla. Reduce the mixing speed to low. Add the flour mixture in three
batches, alternating with the milk. Beat until combined.
Divide the batter evenly among the lined cups,
filling each three-quarters full. Bake until a toothpick comes out clean, 18 to
20 minutes. Transfer to a wire rack and cool completely.
Filling:
1 packet unflavored gelatin
2 cups whole strawberries
1/2 cup sugar
2 tablespoons lemon juice
1 cup sliced strawberries
For the filling: In a medium bowl, combine 1/4
cup water and the gelatin, then set aside. Cut up the whole strawberries into
small pieces, and set aside in a small bowl. Using a food processor, puree the
strawberries and pour into a medium saucepan. Add the sugar and lemon juice to
the sauce pan. Cook over medium-high heat until it begins to bubble, stirring
constantly. Let the mixture boil for 2 minutes. Pour the hot mixture into the
bowl with the water and unflavored gelatin. Stir together until incorporated.
Add in the cut strawberries. Put in the refrigerator until the mixture has

Root Beer Float Cupcakes
Orange Creamsicle Cupcakes
Caramel Apple Cupcakes with Caramel Apple Filling and Caramel Buttercream
Ingredients:
For Glaze:
2 cups confectioners' sugar
For Frosting/Filling:
1 1/2 sticks butter, softened
Directions:
For Glaze:
Combine all ingredients in a small bowl; mix until smooth. Spoon onto the top of your cupcakes after you have added the filling but before the frosting. You can drizzle the leftovers on top of the frosting if you want.
For Frosting/Filling:
In the bowl of an electric mixer, cream butter until smooth. On low-speed, add powdered sugar one tablespoon at a time. I know, I know, this is tedious but will result in a frosty that is smooth and creamy, not grainy and you will likely not need all 4 cups of the powdered sugar to reach appropriate frosting consistency, if you add the sugar in slowly like this. Increase speed to bring the frosting together. Add milk and vanilla extract. Beat until smooth. Remove almost all of the vanilla frosting, leaving behind about 1/3-1/2 cup in the mixer. Set vanilla frosting aside. Add root beer extract to remaining frosting in the bowl and beat until it comes together.

Caramel Frosting:
1 cup butter
1 (16-oz.) package dark brown sugar
1/2 cup evaporated milk
1/4 teaspoon baking soda
1 tablespoon light corn syrup
4 cups powdered sugar
Toppings:
Toasted pecans
Preparation
Preheat oven to 350 degrees. Stir together first 5 ingredients in a
large bowl until blended. Combine flour and next 3 ingredients; add to butter
mixture, stirring until blended. Stir in apple. Place paper baking cups in 2
(12-cup) muffin pans, and coat with cooking spray; spoon batter into cups,
filling two-thirds full. Bake for 12 to 15 minutes or until a wooden pick
inserted in center comes out clean. Cool in pans on wire racks 10 minutes;
remove from pans to wire racks, and cool completely.
To prepare frosting, melt butter in a 3-qt. heavy saucepan over medium
heat. Add brown sugar; bring to a boil, stirring constantly. Stir in evaporated
milk, baking soda, and corn syrup; bring to a boil. Remove from heat, and let
cool completely (about 1 hour). Transfer to a bowl. Remove 1 cup of carmel. Gradually add powdered
sugar to caramel mixture, beating at medium speed with an electric mixer until
blended. Beat at high speed 2 minutes or until creamy. Use immediately.
First spread a layer of carmel over cupcakes. Then frost using a piping bag. Last drizzle carmel over the top.
Frost the cupcakes, and then drizzle the remaining caramel over the top.

Cookies and Cream Cupcakes
Chocolate Covered Cherry Cupcakes
Ingredients:
For the Cake:
2 cups sugar
1 3/4 cups all purpose flour
3/4 cup unsweetened cocoa (best quality available)
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup Milk
1/2 cup vegetable oil
2 teaspoons vanilla extract (best quality available)
1 cup boiling water

For Filling:
24 mini york peppermint patties
For Icing:
2 sticks of butter
1/4 tsp of peppermint extract
5 cups of powder sugar
4 tbsp of heavy whipping cream
For Glaze:
2 oz semi sweet chocolate, chopped finely
1/4 cup heavy cream
1 teaspoon vanilla
2 Tablespoons honey
12 mini peppermint patties
Directions:
For Cake:
In a large mixing bowl, stir together sugar, flour, cocoa, baking powder, baking soda, pudding mix, and salt. Add eggs, milk, oil and vanilla. Beat on medium speed for one minute. Stir in boiling water (the batter will be thin, don't worry, this is right). Fill liners 2/3 full with batter. (I usually put the batter into a large measuring cup with a pour spout, and then pour the batter into the liners.)
Bake cupcakes at 350 for approximately 5 minutes. Take cupcakes out, and put the mini peppermint patties in the center of the cupcakes. Then continue to bake the cupcakes for 20-22 minutes.
For Frosting:
Cream the butter, extract, and cream. Add the powder sugar slowly. Mix until blended well. Pipe onto the cupcakes. Put cupcakes into the refrigerator for 30 minutes before adding glaze.
For Glaze:
Put chocolate in a small bowl. Pour cream into a small saucepan and heat on the stove until it just starts to simmer and gets hot. Remove from heat and pour over chocolate. Stir until chocolate is melted. Add vanilla and honey and stir.
Let glaze cool just a bit until it is lukewarm and a bit thicker. Pour over frosting. Add a half of a peppermint patty to the top of each cupcake.

For the Cake:
2 cups sugar
1 3/4 cups all purpose flour
3/4 cup unsweetened cocoa (best quality available)
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup Milk
1/2 cup vegetable oil
2 teaspoons vanilla extract (best quality available)
1 cup boiling water
1 package of instant chocolate pudding mix
For the Filling:
3/4 cup brown sugar
3/4 cup sugar
1/2 cup corn syrup
1/3 cup butter
2/3 cup whipping cream
2 cups pretzels
For the Frosting:
2 cup confectioners’ sugar
2 cup creamy peanut butter
10 tablespoons unsalted butter, at room
temperature
2 teaspoon vanilla extract
1/2 teaspoon kosher salt
2/3 cup heavy cream
For the Bark:
2 sticks of unsalted butter
1 cup light brown sugar
1 pound bag of mini pretzels (you probably won’t
use the whole bag)
12 ounce bag of semi-sweet chocolate chips
2 cups honey roasted peanuts
sea salt, for sprinkling on top
Directions:
For the Cake:
In a large mixing bowl, stir together sugar, flour, cocoa, baking powder, baking soda, pudding mix, and salt. Add eggs, milk, oil and vanilla. Beat on medium speed for one minute. Stir in boiling water (the batter will be thin, don't worry, this is right). Fill liners 2/3 full with batter. (I usually put the batter into a large measuring cup with a pour spout, and then pour the batter into the liners.)
Bake cupcakes at 350 for approximately 20-22 minutes.
For the Filling:
In a medium saucepan combine sugars, syrup and
butter. Cook over medium heat, stirring occasionally, until mixture comes to a
full boil, about 5 – 6 minutes. Remove from heat and cool 5 minutes. Stir in
whipping cream. Pour into a jar and store in refrigerator. It will
thicken when cold.
Chop the pretzels, and add to the Carmel sauce.
Using a piping bag without a tip, pipe the filling into the cupcakes.
For the Frosting:
Place the confectioners’ sugar, peanut butter,
butter, vanilla and salt in the bowl of an electric mixer fitted with a paddle
attachment. Mix on medium-low speed until creamy, scraping down the bowl with a
rubber spatula as you work. Add the cream and beat on high speed until the
mixture is light and smooth.
For the Bark:
Preheat the oven to 400 degrees F. Cover an 11×17
baking sheet with aluminum foil. Set aside.
Melt 2 sticks of butter in a small saucepan over
medium heat. While the butter is melting, place enough pretzels on the prepared
baking sheet to form a single, even layer. Repeat this step with the peanuts.
Once the butter has melted, add the brown sugar
and stir well to incorporate. Allow the brown sugar and butter to simmer and
bubble, but do not let it boil. You may need to adjust the temperature to low.
Stir the butter-sugar mixture occasionally. It should take about 3 minutes for
the butter and sugar to caramelize, but keep a close eye on it because it will
burn quickly.
When the sugar and butter have caramelized, pour
the mixture evenly over the pretzels, strafing it back and forth down the
length of the sheet. The caramel hardens quickly so it’s important to pour it
as evenly and quickly as possible. If there are any clumps, use an offset
spatula to spread the caramel as best you can. Bake for 5-7 minutes. Allow to
cool completely.
Use a microwave safe bowl to make the chocolate
layer. Microwave chocolate chips in intervals of 30 seconds, stirring after
each interval, until smooth. The chocolate should melt in only a couple of
minutes.
By this time the pretzel-caramel mixture should
be out of the oven. Pour the chocolate over the pretzel-caramel mixture,
strafing it down the length of the baking sheet just as you did for with the
caramel layer. Again, move evenly and quickly. Use an offset spatula to smooth
out any clumps or thick spots. Sprinkle sea salt evenly over chocolate before
it starts to harden. Allow the baking sheet to harden in the fridge for at
least 1 hour.
When the bark has cooled and hardened, remove
from the fridge and carefully pull the aluminum foil off the back. Break the
bark into pieces and serve. Best stored in the refrigerator.

1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup whole milk
1/2 cup vegetable oil
2 teaspoons vanilla extract (best quality available)
1 cup boiling water
1 package of instant chocolate pudding mix
1 cup shredded coconut
1 cup chopped almonds
For Filling:
- ½ whole Vanilla Bean
- 1-¼ cup Whole Milk
- 1 cup Sweetened Coconut, Toasted
- 3 whole Large Egg Yolks
- 1 pinch Salt
- ¼ cups Granulated Sugar
- 2 Tablespoons All-purpose Flour
- 2 Tablespoons Cornstarch
- 1 teaspoon Amaretto
For Icing:
1 cup cream cheese
1/2 cup butter
1/4 cup unsweetened cocoa powder
4 cups confectioners sugar
1 cup chopped almonds, toasted
1 cup coconut, toasted
1 tsp vanilla
Directions:
For Cake:
In a large mixing bowl, stir together sugar, flour, cocoa, baking powder, baking soda, pudding mix, and salt. Add eggs, milk, oil and vanilla. Add coconut and almonds. Beat on medium speed for one minute. Stir in boiling water (the batter will be thin, don't worry, this is right).
Fill liners 2/3 full with batter. (I usually put the batter into a large measuring cup with a pour spout, and then pour the batter into the liners.) Bake cupcakes at 350 for approximately 20-22 minutes.
For Filling:
Split the vanilla bean lengthwise in half, scrape seeds out and add both seeds and bean paste to the milk in a medium saucepan over medium heat. Heat just until it starts to simmer (tiny bubbles begin to form around the edges). Remove the milk from the heat, cover and let steep for about 5 minutes.
Take the coconut for the filling, cupcakes, and garnish (2 1/2 cups total). Spread coconut out on a parchment-lined cookie sheet and toast very lightly in a 350ºF oven for about 5 minutes, stirring frequently, just until most of it is slightly golden. Remove from the oven and cool.
Whisk egg yolks, salt, and sugar together in a large bowl until well blended and smooth.
Sift together the flour and corn starch. Then whisk flour and cornstarch into the egg mixture until smooth.
Remove vanilla bean from the milk. While whisking constantly, slowly add a small amount (about 1/2 cup) of hot milk to the egg mixture until it is combined. Whisking constantly, add the egg mixture back into the pan of milk. Return the pan to medium heat and whisk constantly until the mixture starts to boil. Continue to whisk for another 30-60 seconds until it thickens. Remove pan from the heat, and immediately stir in amaretto and 1 cup toasted coconut. Pour mixture into a small bowl and press a piece of plastic wrap lightly onto the surface of the custard to prevent a skin from forming. Let cool to room temperature, then cover the bowl with another piece of plastic wrap and refrigerate until ready to use. This can be prepared 2 days ahead. You should prepare the filling one day ahead so it has time to completely chill before using.
For Icing:
Cream the cream cheese and butter together. Add sugar and cocoa, beating in a little at a time until well creamed. Add vanilla. Transfer icing to a piping bag. Frost cupcakes. Decorate with toasted coconut and almonds.

The centers of 10 Cadbury creme eggs scooped out - save the chocolate shells for decoration
1 1/2 cup unsalted butter, at room temperature

milk to thin icing
Directions:

Slowly add half of the powdered sugar and beat until incorporated. Add the vanilla extract.
Add the rest of the powdered sugar and beat well for 2-5 minutes until frosting is smooth and creamy.
Add the creme centers and beat until combined. Add milk 1 tablespoon at a time until the frosting is of desired consistency.
Take your piping bag without a tip, run a stripe of yellow icing gel down the bag.
Add the icing to the bag.

Cherry Limeade Cupcakes
Chocolate Cupcakes with Chocolate Mint Gauche and Peppermint Cream Icing
Ingredients:
Cake
5 1/4 cups flour
3/4 cup corn starch
1 tsp salt
2 tsps baking powder
1 tsp baking soda
2 cups (4 sticks) unsalted butter, room temperature
2 cups sugar
2 limes, zested and juiced
10 oz can of limeade concentrate or lime margarita concentrate, thawed and at room temperature
6 eggs
1 cup buttermilk
1/3 cup hot water
1 package vanilla pudding mix
Lime Syrup
1 10 oz can of lime juice concentrate or lime margarita concentrate, thawed
1 cup powdered sugar
Cherry Buttercream
Double this recipe to have enough to frost 4 dozen lime cupcakes
1 cup (2 sticks) unsalted butter, room temperature
1 lb powdered sugar, sifted
5-6 tbsp Maraschino cherry juice
3-4 tbsp heavy whipping cream
1/8 tsp Wilton Christmas Red food color gel
1 tbsp meringue powder
cherry extract to taste--make sure it isn't medicine tasting
Maraschino cherries, for garnish
Lime wedges, for garnish
Directions:
Cake
- Preheat oven to 350 F degrees. Line cupcake pan with liners.
- In a medium bowl, prepare the sugar by working the lime zest into sugar by pressing the back of a spatula down into sugar, thus releasing the oils from the zest into the sugar. This process should take about five minutes, and the sugar will become very fragrant. Set aside.
- In another large bowl, sift together the flour, corn starch, salt, baking powder and soda three times. You really want to make sure the corn starch is very incorporated into the flour. Set aside.
- In the bowl of an electric mixer, cream the butter until smooth. Add the lime sugar and mix on high until light and fluffy.
- Add the entire can of limeade concentrate and lime juice. Mix until combined. Don’t worry if it appears curdled… it’s normal at this point!
- Add the eggs one at a time and mix until incorporated.
- In three parts, add the flour mixture. Between each addition of flour, add half the milk. Mix only until the flour is just combined.
- Add the hot water and mix by hand until incorporated. DO NOT OVER MIX!
- Fill liners 2/3 full, or use an ice cream scoop to distribute one full scoop into each liner.
- Bake for 17-19 minutes or until a toothpick comes out clean.
- Cool in pans for 5-10 minutes before removing to wire rack to cool completely.
- Once cool, poke 7-10 holes in each cupcake with a toothpick. Drizzle a tablespoon of syrup over each cupcake, allowing it to soak into the cake.
Lime Syrup
- Whisk together the powdered sugar and thawed concentrate until all the sugar has dissolved into the concentrate.
Cherry Buttercream
- In the bowl of a stand mixer with the paddle attachment, cream the butter until smooth.
- Add the sifted powdered sugar, one cup at a time, to the butter. Cream after each addition.
- After half the sugar has been added, add the cherry juice and mix until combined.
- Add enough whipping cream until you get your desired consistency, you may not need all of it, or you might want to add more.
- Mix in the coloring.
- After everything has been combined, mix on high for 30 seconds.
- Pipe onto cupcakes and top with a cherry and lime for garnish.

Let cool then transfer to the refrigerator to thicken, 30 minutes to 1 hour.
For Icing:
Place butter in a large mixing bowl and blend slightly. Add cream cheese and blend until combined, about 30 seconds.
Add powdered sugar (a little at a time) and blend on low speed until combined. Increase to medium speed and beat until it begins to get fluffy.
Add vanilla and peppermint extracts
Slowly add the heavy cream, a little bit at a time until desired consistency is met. (Don't add too much if you want the frosting to stay in place when piped on cupcakes.)
Beat until fluffy, about 1 minute.
1. To achieve the red stripe in the frosting: Before filling a large piping bag with frosting, add some red gel food coloring to a toothpick, and draw two (vertical) lines with the red dye on the inside of the piping bag. Then carefully fill the piping bag with frosting. Squeeze some frosting into a bowl until you begin to see the red stripe, then frost the cupcakes.

With mixer running, add syrup to whites in a stream, beating on high speed until no longer steaming, about 3 minutes. Add butter bit by bit, beating until spreadable, 3 to 5 minutes, beat in vanilla.
